This class is an introduction to fondant designed for anyone who is new to fondant covered cakes and decorations.
Courtney will share all her tips and tricks of the trade she has learned and developed over the years. Students will learn how to knead,
color, and roll fondant to cover their own one tier cake. Cakes will be finished off with simple fondant decorations.
Fresh baked cake and all decorating supplies and tools are provided. Each student will go home with a finished, edible cake to impress their
friends and family. |

Learn some of the techniques Courtney to win Food Network Challenge with her Finding Nemo cake.
Students will learn sculpting techniques with real cake as they create a 2 tier, topsy turvy cake with an ocean theme.
Students will also learn the delicate art of character sculpting with modeling chocolate as they create Nemo and little Squirt, the turtle!
This class will cover a wide variety of techniques and is highly recommended for intermediate to professional cake decorators. |

| Description: |
Two classes in one! Join Courtney Clark and guest teacher Chrissie Boon (Too Nice To Slice, Kitchener, ON) as they spend two days teaching the art of
creating elegant wedding cakes and beautiful gum paste flowers. Students will spend 18 hours sculpting, covering, and assembling a fondant wedding cake as well as learning the
delicate art of creating, painting, and assembling several different types of ornate gum paste flowers with expert Chrissie Boon. Lunch will be provided both days of this high level,
intensive wedding cake course that will allow all students to take home a true wedding cake masterpiece. A great course for fondant or gum paste newbies to learn the basics,
or professionals who want to hone their skills or learn some new techniques! |

Calling all kids ages 8-13 to join us for a fun, sugary, creative first day of Spring break!
Kids will learn the basics of fondant and royal icing as they decorate shaped sugar cookies (we may even eat a few too!)
They will also learn to use piping bags to decorate cupcakes with buttercream, and finish them with fondant details.
We recommend that students eat lunch prior to class. Snack and drinks will be provided. Kids will go home with their finished
cookies and cupcakes and recipes to try at home! |

Take a trip to Wonderland during this two day whimsical class. Courtney loves all things Wonderland and has made several Teapot and Teacup cakes.
Learn to sculpt and cover a cake teapot and how to make gumpaste handles, spout, and a teacup. Airbrush color and luster dust will finish off your masterpiece.
Basic fondant and gum paste knowledge is preferred. Snacks and drinks will be provded but we recommend that students eat a meal or snack prior to class. |

Whimsical cakes are our specialty! Join us for our first ever how-to class that will cover building a slanted cake, preparing with buttercream,
and sculpting a whimsical shape. Finally, we will decorate the cakes with fondant, and learn to stack and support them for a strong finished cake. This class is a must
for professional cake decorators as well as intermediate cake enthusiasts. Knowledge of fondant and basic cake decorating techniques is preferred. Snacks and drinks
will be provided but we suggest that students eat a meal or snack prior to class. |

Come join Courtney and Kendon as they travel to Chattanooga, TN to reveal the inner secrets of their own cake structure techniques as they show
each student how to build their own three-tier topsy-turvy cake. Faux cakes will be covered and decorated with fondant and placed on an internal support system
that it can be taken home and reused. Learn how to shop the aisles of your local hardware store for the right materials to create cakes that defy gravity!
All cake dummies, decorating supplies, structure materials, and most decorating tools will be provided for one cake to take home. |

Terms and Conditions:
1 . Payment: Full payment is required at the time of registration for any class. Payments may also be made in person with cash, debit, or credit. Credit card payments
may also be made over the phone. If paying by check, it must be received three weeks prior to the start of the class.
If a check is returned due to NSF, students will be charged a $20 fee.
2. Cancellation Policy: Any student who cancels within two weeks before the class date will only be refunded 50% of the class fee, unless someone else can be
found to take their spot, at which point a full refund may be granted. No refund will be granted to any cancellation within 3 days of the class date. If a student
does not attend a registered class, payment will be forfeited. Cake Nouveau will not provide makeup classes for missed sessions.
3. Class Schedule Changes or Cancellations: Cake Nouveau reserves the right to cancel a class up until 48 hours before the class date. We reserve the right to
change class schedules or adjust necessary fees as needed. If cancellation or changes occur, a full refund will be given to students.
4. Class Sizes: Classes at Cake Nouveau are limited in order to provide a more personal learning environment. If a class is full, a student can be added to the wait
list and Cake Nouveau will contact students if and only if space becomes available.
5. Materials and Equipment: Cake Nouveau will provide all ingredients, supplies, and tools required for use during each class unless otherwise listed in the course description.
Students may bring their own personal tools if they wish. Recommended attire for class includes long pants, closed toe shoes, a comfortable sleeved shirt or chef jacket,
and long hair tied back.
6. Arrival & Departure Times: Students should arrive no more than 10-20 minutes before the time classes are scheduled to begin. Parents please check in your children when you
drop them off. Parents may also want to plan on arriving 10 minutes prior to the scheduled pick-up time in order to take individual and group photos.
7. Minors Under Age 18: Parents must sign a waiver of liability for any children being left unattended at our store. Cake Nouveau seeks to provide a safe and fun environment for
children to participate in cake classes. All children will be supervised by an adult, however, parents must provide a phone number and be available for contact in case of emergency.
8. Photos & Videos: Students are permitted to take photographs and limited video during classes for personal use only, unless given expressed written consent for other public uses.
Cake Nouveau may also take photos and/or video of class participants and activities, and reserves the right to use these photos or videos any way we wish. Students will be asked to sign
an agreement form at the start of each class at which time they may choose to decline being photographed or taped.
9. Cell Phones: We understand that many students will bring cell phones with them to classes, however, we ask that they be kept put away to minimize interuptions and distractions.
10. Allergies: Cake Nouveau is NOT a nut-free or gluten-free shop. Students should notify us of any allergies or other special health concerns that we should know about. |
