Fondant 101 ~ June 21, 2010 ~ 9:00am - 1:00pm
Age Level: Adult (14 yrs and up)     
Skill Level: Beginner
Description: This class is an introduction designed for anyone who is new to fondant covered cakes and decorations. Courtney will share all her tips and tricks of the trade she has learned over the years. Students will learn how to knead, color, and roll fondant to cover their own one tier cake. Students will finish their cake by decorating their cake board and adding simple fondant decorations. Cakes and all decorating supplies and tools are provided. Each student takes home their finished cake masterpiece!

Princess Cakes ~ June 28-29, 2010 ~ 10:00am - 2:00pm (2 day class)
Age Level: Adult (16 yrs and up)     
Skill Level: Intermediate
Description: Students will spend two days creating two-tier princess cakes using a wide array of cake decorating techniques. Cakes will be sculpted and covered with fondant. Students will be taught the basics of using gum paste while creating a tiara. The two-tiered cake will be completed with fondant decorations, including stripes, swags, and pearls, and placed on a decorated cake board. All students will take home their finished cakes. All cakes, fondant, gum paste, and tools will be provided.

Kids Cake Classes ~ July 5, 2010 ~ 10:00am - 3:30pm
Age Level: Children (8 - 13 yrs)     
Skill Level: Beginner
Description: Cupcake Decorating Class ~ 10:00am - 12:00pm
Kids will learn to make and color buttercream, which they will use to frost their very own cupcakes. Cupcakes will be finished with an assortment of colorful sprinkles or fondant decorations. Each child will take home 4 uniquely decorated cupcakes. All cupcakes, buttercream, and supplies will be provided.
Lunch ~ 12:00pm - 12:30pm
Nutritious & delicious lunch will be provided.
Kids Cake Decorating Class ~ 12:30pm - 3:30pm
Kids will decorate a one tier cake, learning how to roll out fondant to cover a cake, and create simple fondant decorations, like polka dots and stripes. Each child will take home their finished cake. All cake, fondant, and tools are provided.

Giant Cupcake Cake ~ July 26, 2010 ~ 10:00am - 3:00pm
Age Level: Adult (14 yrs and up)     
Skill Level: Beginner to Intermediate
Description: Courtney will share the secrets to creating her classic giant cupcake cake in this popular class. Students will sculpt and stack two tiers of cake, covered in fondant to look like a giant cupcake. Cupcake cake is completed with fondant sprinkles and a cherry on top with a decorated board. Everyone takes home their finished masterpiece. All cakes and decorating supplies and tools are provided.

Topsy Turvy Cake Structure ~ August 2-3, 2010 ~ 10:00am - 2:00pm (2 day class)
Age Level: Adult (16 yrs and up)     
Skill Level: Intermediate to Professional
Description: Courtney and Kendon reveal the inner secrets of their own cake structure techniques as they show each student how to build their own three-tier topsy-turvy cake. Faux cakes will be covered and decorated with fondant and placed on an internal support system that it can be taken home and reused. Learn how to shop the aisles of your local hardware store for the right materials to create cakes that defy gravity! All cake dummies, decorating supplies, tools, and cake structure materials will be provided for one cake to take home.

Kids Cake Camp ~ August 9-11, 2010 ~ 10:00am - 2:30pm
Age Level: Children (8 - 13 yrs)     
Skill Level: Beginner
Description: Kids will spend three fun days learning the arts of cupcakes and cakes. Cupcakes will be the focus of the first day as kids learn to prepare buttercream to frost their very own cupcakes. Day 2 and 3 will focus on preparing and decorating a cake with buttercream and fondant. Each child will take home their edible creations, as well as some other surprise goodies! Lunch and snacks will be provided. All cake decorating supplies and tools will be provided.

Make & Bake 101 ~ August 30-31, 2010 ~ 6:00pm - 8:00pm (2 day class)
Age Level: Adult (16 yrs and up)     
Skill Level: Beginner to Intermediate
Description: Get down to the basics of baking and buttercream making in this FUN-damental class. Courtney will share her original cake recipes and techniques as she guides students through the process of mixing batter and baking cakes! She will also guide students through the process of making her adapted recipe for French buttercream. Students will put their cakes together, layering them and covering them with their own flavored buttercream!

Purse Cakes ~ September 13-14, 2010 ~ 4:00pm - 8:00pm (2 day class)
Age Level: Adult (16 yrs and up)     
Skill Level: Intermediate to Professional
Description: Courtney will demonstrate her techniques as she guides students through the process of creating TWO purses out of cake. Cakes must be sculpted, covered in fondant, and then finished with fondant and gum paste accessories and handles. Students will add the final touch by air-brushing logos on the purse with self-made stencils!

Jack-O-Lantern Cakes ~ October 25-26, 2010 ~ 5:00pm - 8:00pm (2 day class)
Age Level: Adult (16 yrs and up)     
Skill Level: Intermediate to Professional
Description: Just in time for Halloween and Thanksgiving, students will create a 3D jack-o-lantern out of cake! Courtney will teach students how to sculpt cake into the shape of a pumpking and how to cover this interesting cake with fondant! Students will then complete each cake by using fondant and gum paste to create a face, leaves, stem, and other Halloween decorations that will make this cake a definite sensation for your Halloween party!

Terms and Conditions:
1 . Payment: Full payment is required at the time of registration for any class. If paying by check, it must be received three weeks prior to the start of the class. If a check is returned due to NSF, students will be charged a $20 fee. Payments may also be made in person with cash, debit, or credit. Credit card payments may also be made over the phone.

2. Cancellation Policy: Any student who cancels within two weeks before the class date will only be refunded 50% of the class fee, unless someone else can be found to take their spot, at which point a full refund may be granted. No refund will be granted to any cancellation within 3 days of the class date. If a student does not attend a registered class, payment will be forfeited. Cake Nouveau will not provide makeup classes for missed sessions.

3. Class Schedule Changes or Cancellations: Cake Nouveau reserve the right to cancel a class up until 48 hours before the class date. We reserve the right to change class schedules or adjust necessary fees without notice. If cancellation or changes occur, a full refund will be given to students.

4. Class Sizes: Classes at Cake Nouveau are limited in order to provide a more personal learning environment. If a class is full, a student can be added to the wait list and Cake Nouveau will contact students if and only if space becomes available.

5. Materials and Equipment: Cake Nouveau will provide all ingredients, supplies, and tools required for use during each class. Students may bring their own personal tools if they wish. Recommended attire for class includes long pants, closed toe shoes, a comfortable sleeved shirt or chef jacket, and long hair tied back.

6. Allergies: Cake Nouveau is NOT a nut-free or gluten-free shop. Students should notify us of any allergies or other special health concerns that we should know about.
