  Cookies 'N Cake Pops for Kids
Date/Time: Wednesday, August 7, 2013 -- 2:00-4:30pm

Skill Level: Must be able to use cookie cutters and roll cake balls!
Description: In this new class, Chef Courtney Clark will lead kids through the complete process of making two very popular sweets. Kids will cut out, bake, and then decorate their own sugar cookies with sweet royal icing. Kids will also learn how to mix cake and buttercream, roll into delicious balls, which will then be placed on sticks and dipped in chocolate. Each kid will take home a box of treats they made!

  Cake Truffles 101 (with Courtney Clark)

Description: Our cake truffles have become very popular, and now you can learn to make them yourself! These chocolate dipped balls of cake and buttercream are all the rage! Join chef Courtney Clark as she shows students how to mix, scoop, roll, dip, and decorate these tasty treats! All students will create and share their own flavors, taking home at least 2 dozen truffles to share with friends and family.

  Fondant 101 (with Courtney Clark)

Description: Join Chef Courtney Clark as she shares here expert knowledge and experience in this introduction to fondant covered cakes. Courtney will share her personal tips and tricks of the trade that she uses to craft her award winning cakes. Learn the fundamentals of working with fondant as you knead, color, roll, and cover you own cake with fondant. Simple fondant decorations will be added to complete your first masterpiece to take home and show off.

  Fondant 201 (with Courtney Clark)
Date/Time: Wednesday, August 28, 2013 -- 5:30-7:00pm

Age Level: 16 yrs and up
Skill Level: Beginner/Intermediate
Description: Join Chef Courtney Clark for a sequel to Fondant 101 and learn to make more intricate fondant decorations to adorn your cakes. Each student will start with a pre-covered cake dummy to decorate with a variety of fondant roses, drapes, stripes, swags, and pearls.
(Prerequisite: Fondant 101 or similar experience.)

  Cake Tasting Event
Date/Time: Saturday, August 24, 2013 -- 2:00-4:00pm

Age Level: All ages are welcome to join us!
Skill Level: Must be able to eat cake!
Description: Bring your family, friends, or a date to our first ever, public cake tasting event. We will be selecting 5 of our favorite cake flavors for each person to sample and enjoy. Drop in anytime between 2pm and 4pm on Saturday, and we will slice and serve you 5 fresh slices of cake! Tickets are $7 at the door, but purchase your tickets by Thursday, August 22nd and pay only $5 for 5 slices of cake!
Event Fee: $7 per person ($5 if tickets purchased by 8/22)

Terms and Conditions:
1 . Payment: Full payment is required at the time of registration for any class. Payments may also be made in person with cash, debit, or credit. Credit card payments may also be made over the phone. If paying by check, it must be received three weeks prior to the start of the class. If a check is returned due to NSF, students will be charged a $20 fee.

2. Cancellation Policy: Any student who cancels within two weeks before the class date will only be refunded 50% of the class fee, unless someone else can be found to take their spot, at which point a full refund may be granted. No refund will be granted to any cancellation within 3 days of the class date. If a student does not attend a registered class, payment will be forfeited. Cake Nouveau will not provide makeup classes for missed sessions.

3. Class Schedule Changes or Cancellations: Cake Nouveau reserves the right to cancel a class up until 48 hours before the class date. We reserve the right to change class schedules or adjust necessary fees as needed. If cancellation or changes occur, a full refund will be given to students.

4. Class Sizes: Classes at Cake Nouveau are limited in order to provide a more personal learning environment. If a class is full, a student can be added to the wait list and Cake Nouveau will contact students if and only if space becomes available.

5. Materials and Equipment: Cake Nouveau will provide all ingredients, supplies, and tools required for use during each class unless otherwise listed in the course description. Students may bring their own personal tools if they wish. Recommended attire for class includes long pants, closed toe shoes, a comfortable sleeved shirt or chef jacket, and long hair tied back.

6. Arrival & Departure Times: Students should arrive no more than 10-20 minutes before the time classes are scheduled to begin. Parents please check in your children when you drop them off. Parents may also want to plan on arriving 10 minutes prior to the scheduled pick-up time in order to take individual and group photos.

7. Minors Under Age 18: Parents must sign a waiver of liability for any children being left unattended at our store. Cake Nouveau seeks to provide a safe and fun environment for children to participate in cake classes. All children will be supervised by an adult, however, parents must provide a phone number and be available for contact in case of emergency.

8. Photos & Videos: Students are permitted to take photographs and limited video during classes for personal use only, unless given expressed written consent for other public uses. Cake Nouveau may also take photos and/or video of class participants and activities, and reserves the right to use these photos or videos any way we wish. Students should notify Cake Nouveau if they wish to decline being photographed or taped.

9. Cell Phones: We understand that many students will bring cell phones with them to classes, however, we ask that they be kept put away to minimize interuptions and distractions.

10. Allergies: Cake Nouveau is NOT a nut-free or gluten-free shop. However, our products do not contain nuts unless expressly stated. Students should notify us of any allergies or other special health concerns that we should know about so that we may be aware and take special precautions or accomodations if necessary.

  Baking 101 for Teens (with Chef Tiffany)
Date/Time: Saturday, September 8, 2012 -- 2:00-4:00pm

Age Level: 12 yrs and up
Skill Level: Beginner to Intermediate
Description: Join Cake Nouveau's head baker, Chef Tiffany Little, as she teaches students the basics of measuring, mixing, and baking chocolate and vanilla cupcakes from scratch. Students will work in teams of 2 as they follow the recipe to mix and scoop their cupcakes. While the cupcakes are baking, Chef Tiffany will demonstrate our famous Swiss meringue buttercream recipe and assist students in making their own. Finally, students will flavor their cupcakes and artistically pipe and decorate them. Each student will go home with at least a dozen cupcakes and all recipes to make them at home.

  Italian Macaron Cookies (with Chef Alaina)

Description: Join our pastry chef, Alaina Brillinger, as she teaches the delicate art of creating Italian macaron cookies and the scrumptous fillings that hold them together. After learning the steps, students will work in pairs to mix up their own batch of macarons using the "Italian meringe method". As the macarons set up, pairs will make sweet fillings for their cookies. Once cookies are baked, they will be cooled, filled, and sampled (of course!) Each student will take home a generous box including all flavors that are made during the class!

  Sculpted Dog in a Costume (with Courtney Clark in Kitchener, Ontario)

Description: Join Cake Nouveau's master cake decorator, Courtney Clark, at Icing Inspirations in Kitchener, Ontario, as she teaches her award winning techniques as students learn to sculpt an adorable puppy dog cake. Courtney will help students master the art of clean fondant work as they learn techniques to add true realism to their cakes. Just for fun each puppy will be finished with a fun little costume, perfect for the fall season. Lunch is provided each day, as well as all supplies and tools needed to complete the class.

  Baking 1 (with Courtney Clark)

Description: Join chef Courtney Clark on this two-day indroduction to the fundamentals of mixing and baking our famous cakes, complete with Swiss meringue buttercream. Students will work in teams of 2 to learn the methods behind our Triple Chocolate and Vanilla Bean cakes. Cakes will be mixed, baked, sliced, and assembled with layers of your own Swiss meringe buttercream. Cakes will be beautifully finished and boxed to take home, along with detailed recipes. All supplies and ingredients will be provided.

  DEMO - A Fondant Cake From Start to Finish (with Courtney Clark)

Description: Join chef Courtney Clark for a fast-paced demonstration, in which she will make and decorate an entire fondant cake in only 60 minutes! (No pressure!) Courtney will begin by slicing cakes, assembling with layers of buttercream, crumb coating, covering with fondant, and finally adding fondant decorations. You become the observer as you watch her work and ask questions about the process, and of course, sample some goodies along the way!

  Baking 2 (with Courtney Clark)

Description: Take your baking skills to the next level as chef Courtney Clark brings out your inner French pastry chef! Students will learn to make a basic Pate Sucree (sweet dough) to make 2 different styles of tarts. Chef Courtney Clark will also demonstrate out to caremelize apples, make lemon cream, and assemble a rustic tart as well as a fresh fruit tart. Of course, tasting will be strictly encouraged! All supplies and ingredients will be provided.

  Holiday Cookie Decorating

Description: Bring friends or family for a fun afternoon of holiday cookie decorating! We will provide an assortment of delicious cookies to be your blank canvases, including sugar cookies, gingerbread, shortbread, and more. We've done the hard part, now you can finish them off for yourself or to share! Gift boxes will be provided for your cookie masterpieces! Drop ins are welcome, however, advance reservations are encouraged so that we can guarantee your group a spot and enough cookies!
Fees: Prices will vary depending on the number of cookies decorated!

  Decorating 1 for Teens (with Courtney Clark)

Description: Teenagers are invited to join chef Courtney Clark as she teaches them all about decorating cakes with fondant. In this 2 hour class, students will learn to knead, color, and roll out fondant to cover their very own cake. Cakes will be finished with royal icing borders and swirls, and topped with a decorated cupcake! This is a great chance to learn to use fondant for the first time, or just sharpen your fondant skills.

  Decorating 2 for Teens (with Courtney Clark)

Skill Level: Beginner or Intermediate
Description: This class is a piece of cake! Students will build on their prior fondant experience to create a sculpted "slice of cake" cake, complete with a sugar plate and sugar fork. That's right, the final cake will look like a slice of cake! As a final touch, cakes will be topped with a fondant icecream scoop, drizzled with chocolate sauce and sprinkles.
Pre-requisite: Decorating 1 or similar fondant experience.

  Valentine's Day Dessert Tasting

Description: Our 1st annual Valentine's Day Dessert Tasting was a huge success, so it's back again! Bring your sweetie (or some friends) for a tongue tantalizing and tummy filling SIX flights of decadent desserts paired with drinks. Cake Nouveau transforms into a romantic dessert restaurant for the night, as Chef Courtney Clark describes each luscious dessert as it is served to you. Courses will begin with lighter desserts, and end with rich chocolatey sensations! (Optional complimentary adult beverage tastings included.)

  Piping & Handwriting 101 -- July 18, 2012 -- 6:00pm - 7:30pm
Age Level: 14 yrs and up
Skill Level: Beginner to Intermediate
Description: Chef Courtney Clark is known for creating beautiful messages and ornate designs on cakes using hand piped techniques. Join her as she teaches the basics of making and using royal icing, and shares some of her own personal secrets to writing and making designs on cakes by hand. Students will gain hands-on experience as they watch, learn, and then practice these techniques for themselves!

  Teaparty in Wonderland -- July 28, 2012 -- 1:00 - 3:00pm
Age Level: Children accompanied by adults!
Skill Level: Must be able to drink tea and eat sweets and dress fancy!
Description: Every little girl's dream comes to life in a tasty wonderland! Kids and adults, get dressed up in your favorite party attire for a whimsical afternoon filled with cakes, tea, and entertainment with Alice and the Mad Hatter. A delightful photo booth will be set up by Anima Dolce photography, with tea by Tea Haus, and sweets by Cake Nouveau, of course! (All ages are welcome for this event!)
