Meet The Staff of Cake Nouveau

Courtney Clark - Pastry Chef & Owner
Beginning her career as a Fine Artist, Courtney Clark attended The School of the Art Institute of Chicago, focusing on Life Drawing & Painting. While experimenting with edible art, Courtney became interested in culinary arts, specifically pastry. It was at this time that she decided to leave art school to study with famed pastry chef Jacquy Pfieffer at the French Pastry School in Chicago. Upon graduation, Courtney received the "L'Art de la Patisserie" certificate for mastering French pastry techniques. She now has the privilege to combine both of her talents to create artistic works of pastry art. Courtney’s true enthusiasm for pastry and fine art shine through in her work.

Kendon Smith - Cake Physicist & Business Manager
Kendon was introduced to the world of cake and art in 2005 when he met his future wife, Courtney. He has degrees in Biology and Chemistry, including a Master's in Biological Science from Michigan State University, and has spent the past 12 years teaching high school science. His scientific brain compliments Courtney's artistic mind, allowing him to play an important role in the structural design of many of her larger and more complicated cakes. He also spends time working on this website, writing the weekly newsletter, as well as a plethora of other business related tasks that keep a small store running.
*Fun Fact: Kendon was born and raised in Sao Paulo, Brazil, so he has dual citizenship!

Linda Clark - Office Manager & Ollie Wrangler
Our friendly and well organized office manager Linda just happens to be Courtney's Mom and constant supporter. Linda handles most of our emails, ordering, general organization, and somehow finds time to care for Courtney's baby Oliver, who comes to the shop almost daily.
*Fun Fact: Linda is from Texas and worked as a travel agent before Courtney and her sister, Jill, were born.

Tiffany Cornwell - Customer Service
"Mini" Tiffany joined us in early 2012 and has taken the reigns from Sarah Mayfield as our head customer service staff member. Tiffany is from Jackson, Michigan, and graduated from Saginaw Valley State University in Photography and is now working on her masters. She owns her own photography business called T. Marie Photography and is often seen taking photos of our finished cakes. We are blessed to have this bubbly girl to take your order!
*Fun fact: Tiffany's goal in life is to successfully backpack through Western Europe. And by successful…she means coming back alive!

Alaina Brillinger - Pastry Chef - Baker/Decorator
Alaina has rejoined us after a couple of years away, to pursue a restaurant pastry position. We were sad to see her go but are elated to have her back with us! She is a graduate of the culinary program at School Craft College in Michigan, and is now also working for our friends (and former neighbors) TeaHaus where she makes amazing macaroons and other fine desserts for their café.
*Fun Fact: Alaina is also newly engaged to her fiancé Aaron, congrats to them!
